Cast iron anytime meal

A great anytime meal is this throw-together cast-iron skillet meal.  I improvised, but took notes off of a recipe posted on Tasty Kitchen.  Though I was wary at first, the Italian, Mexican, and Thai fusion of Italian stewed tomatoes, Mexican cotija cheese, and Thai garlic sriracha was surprising harmonious and delicious.  The eggs on top made it a substantial meal and easy to sell as an easy breakfast, but all the savory fillings underneath make it pretty much a great last-minute lunch or dinner.
